Mulla Villa's Famous Scones
Ingredients:
- 600 grams Self Raising Flour
- 850 ml of warmed milk (small quantity of milk for brushing)
- Half of a level teaspoon Salt
- 4 level tablespoons of Butter
Method:
Pre-heat fan forced oven to 210 C
THE SECRET IS SPEED
Put SR Flour in large mixing bowl add butter and salt.
With the whisk of the electric mixer, whisk for one minute until mixture has a crummy appearance.
Change to the Dough Hook.
While the mixer is going add warm milk slowly, approx 20 seconds.
Speed up for another 10 seconds.
Mixture should be sticky.
Turn out onto well floured board.
Use plenty of flour, handle as little as possible, do not knead, fold and flatten with finger tips, this should be done quickly till it's 1.5 inches thick, cut out with round biscuit cutter of glass tumbler.
Place on a lightly greased oven tray, brush with warm milk, cook till lightly golden (10 minutes) rotate the tray just once to ensure even browning.
Remove with a metal spatula into a basket lined with a clean tea towel.
Cover with a tea towel to stop the scones from drying out, the basket keeps the scones fresh.
This quantity makes 30 scones.
